At the end of the week when you’re running low on food, I promise you can still throw everything together and make a healthy and delicious salad!
Mine has: romaine lettuce, 1/2 avocado, yellow bell peppers, feta cheese, unsalted toasted pine nuts, whatever meat or protein you have in the fridge (I used a piece of low-sodium lean turkey breast), and a dressing of choice (low-fat, and don’t go overboard! Or try oil and vinegar, lemon squeezes, etc!).
I served this with some seasoned brussels sprouts (my faaaavorite!)
